Pennsylvania Pickled + Preserved Dinner

Join us for a four-course dinner that celebrates locally-foraged flora and fauna. Our chefs collaborated with Heather McMonnies of Food Hedge, a farm that provides local chefs with hard-to-find but highly-sought-after ingredients, to source, pickle, ferment, and preserve. They've created a menu that showcases how foraged ingredients can be enjoyed out of season.

Reservations are required. $55 per person. Cost includes a welcome cocktail, 3-course dinner, and dessert. Additional beverages will be available to purchase during the dinner.

with white pine chow-chow foraged by Food Hedge, Castle Valley Mill grits

Third Course
Jurgielewicz & Son cured roast duck breast
with confit turnips from Lancaster Farm Fresh, brown butter spaetzle made with Castle Valley Mills rye flour, cured duck yolk, duck jus

Dessert
Spruce apple butter dumplings
with buttermilk molasses ice cream
