An Heirloom Tomato Tart
With the tomato harvest in full swing, we're constantly in search of fresh ways to use our favorite crop of the summer. Our latest culinary creation is the heirloom tomato tart above. We adore the rustic appeal of tomato slices in all shapes and sizes, and have been turning to this dish over and over since tomatoes pair beautifully with so many things in the kitchen. The tart above is a classic recipe using tomato, basil, manchego, and parmesan, but we've been dreaming up dozens of combinations that would be equally delicious. Our favorites include:
Ricotta & Thyme
Arugula & Pancetta
Goat Cheese & Herbes de Provence
Mustard & Swiss
Feta & Pesto
Camembert & Herb Oil
Once you've chosen your tart filling, start by evenly slicing your heirloom tomatoes, removing the seeds. Use your favorite savory dough recipe, and roll out the chilled dough into a circle or oval. Fold the edges and pinch them closed to form the crust. Using a pastry brush, spread olive oil over all the dough, including the top of the folded crust. Layer your tomatoes, cheese, and garnishes. Season with salt and pepper, and bake until the crust is golden.
