A Halloween Toast with Von Humboldt's

We're getting into spooky spirits this Halloween with a little help from Tamworth Distilling, the New Hampshire-based sister distillery of Philadelphia's Art in the Age. They're sharing their recipe for The Witching Hour, a cocktail made with spicy sotol and sweet tamarind cordial. Based on a recipe from the diary of nineteenth century naturalist Alexander Von Humboldt, Von Humboldt's Tamarind Cordial is made from tamarind fruit, lemon zest, and brown sugar. Its sweet, nutty flavor is the perfect balance for sotol, a regional spirit from northern Mexico that shares the peppery profile of mezcal. Mixed with dry vermouth, lemon and orgeat to bring forward the cordial's nutty notes, it's a creative cocktail for spooky celebrations.

The Witching Hour
1.5 oz. Sotol Por Siempre
.75 oz. Von Humboldt's Natur Wasser Tamarind Cordial
.25 oz. Dolin Blanc
.25 oz. orgeat
.25 oz. lemon juice
3 dashes celery bitters

Stir to combine all ingredients and serve over a single large ice cube in a rocks glass. Garnish with a shaved celery twist.
