A Memorial Day Mojito Recipe with Steve Wildy

“The mojito is arguably one of the most perfect summer cocktails,” Steve Wildy, our beverage director, recently told us. He's come up with a refreshing twist on the popular libation, and we’re here to share it with you ahead of the holiday weekend. He says that “while I’m still a big fan of the original recipe, it’s a challenging drink to serve at a party without a dedicated bartender to handle all that muddling, so I created this version with a mind towards ease of service. The striking, jagged edge shiso leaf has an intoxicating herbaceous aroma and a bright, citrusy flavor, so it naturally lends itself well to a twist on a mint-based cocktail. Given its origins, we steered our mojito variation towards Japanese flavors by introducing sake to the mix and found that blueberry really pushed it in a summery feel while providing a stunning visual contrast to the vibrant green shiso leaf.” Read on for the recipe for both the cocktail itself and the homemade blueberry puree. Sono Mojito

Makes 1 drink
1 oz blueberry shiso puree (recipe below)
0.75 oz sake (we suggest Momokowa organic Oregon sake)
0.75 oz white rum
Club soda  
2 limes cut into thin pinwheels for garnish
Shiso leaves for garnish

Build first 3 ingredients in cocktail shaker, shake, and pour over ice in a 10 ounce highball glass. Top with a splash of soda and garnish with a lime pinwheel and shiso leaf.      

Blueberry Shiso Puree

Makes approximately 15 drinks  
1 pint blueberries
10 shiso leaves, chopped
1/4 cup sugar    
1/8 cup lime juice    
Zest of one lemon

Combine blueberries, shiso leaves, lemon zest, and sugar over low heat for 20 minutes until berries pop and sugar is integrated. Take mixture off heat and blend in a food processor including zest (can strain for finer texture if preferred). Allow to cool and add lime juice.
